Welcome to How To Cook That I'm Ann Reardon.
Today we are making Freak shakes which arelike milkshakes that have gone crazy. Which
one would you like to have?
This idea comes from a cafe in Australia calledPâtissez they have people queuing for 40 minutes
to get one of these.
The first thing we need to do is make someganache. Use a mixture of milk and dark chocolate
and pour over some hot cream.
I'll put all of the recipe quantities forthese on the http;//howtocookthat.net website
for you, and there is a link in the descriptionbelow.
Once that has rested for a few minutes giveit a good stir until it is well combined and
looks glossy and yummy.
For each two milkshakes that you want to makemeasure out half a cup of this ganache and
put it to one side at room temperature. Pourthe rest of the ganache into a plastic bag.
Flatten it out and put it in the freezer tochill so it thickens up.
If you put it in just in a bowl it will takea lot longer to chill.
All of the shakes have cream on top. So takesome whipping cream and add a little vanilla
extract. Then use electric beaters to whipthe cream. You'll need to turn the beaters
off to check if it is ready - this is nearlydone but see how it's not quite holding its
shape it's still a bit droopy. Just give ita little bit longer... and then turn it off
and check again and that's how it should be.So you don't want to over whip it.
Place that into a piping bag fitted with astar shaped nozzle and just put that to one
side while we can make our shakes.
for the CHOCOLATE BROWNIE FREAK SHAKE
Place the half a cup of that ganache intoa blender with milk and ice cream. and blend
that up well and you get a really rich chocolateymilkshake
Using the ganache that we put in the freezerso it is nice and thick spread a scoop onto
the inside of the jars. Then spread anotherscoop around the top of the glass, now be
really generous here because we want the tolook crazy and over the top. To make it look
shiny heat the outside for a moment with abrulee torch. We don't want to burn it so
not too long just a quick pass over.Add a scoop of ice cream to each one and pour
in the chocolate milkshake. And you'll seethat ice cream just float to the top which
is going to help when we are putting our creamon.
Pipe a circle of cream starting around theoutside edge of the jar then around in a spiral
into the middle. Then pipe more on top becauseeverything about these is generous and over
the top.
To each one add a square of chocolate brownieand a big marshmallow. Then use your brulee
torch to toast the marshmallow until it isbrown and melted and crispy and it's ready
to serve.
For the NUTELLA PRETZEL milkshake in a blenderput milk, half a cup of ganache, a big spoon
of nutella and of course a scoop of ice cream.and blend that all together.
Smear some nutella inside the jars and evenmore around the top. This one really is for
people who just like to eat nutella by thespoonful. Flatten it out a nit around the
top there and then add pretzels around thetop of each one. Add a scoop of ice-cream
and pour in the nutella milkshake.
Pipe the cream around the top. Then add morenutella and pretzels to decorate. Yum
To make the CARAMEL APPLE PIE freak-shakes,these are my husband Dave's favourite. Take
a sheet of puff pastry and cut it into quarters.
Add some tinned apple to one side. Then foldthe pastry in half over the top.
Use a fork to seal the edges and place ontoa baking tray. If you're apple is unsweetened
sprinkle you may want to sprinkle a littlesugar on top. and bake in the oven for 15
minutes.
In a blender pour in some milk, salted carameland ice cream and whip that altogether.
Smear some caramel on the inside of the jarjust like we did with the nutella and around
the top edge. If you want it dripping downheat it with a brulee torch and it will pour
down the sides there.. Add the ice-cream andsalted caramel milkshake. Then pipe your cream
on top and put and apple pie on top of thatand then drizzle with more caramel sauce.
Now for our DONUT FREAK SHAKES Place somejam around the outside of your jar and then
add some custard around as well. Put in ascoop of vanilla ice cream then pour in a
vanilla milkshake which is just made withyour vanilla ice cream and milk.
Top that with cream.Then add your straw right into the center
and put the donut over the top placing itright in the middle so it doesn't slide off.
