Gajar ka halwa, also known as Gajrela,Gajar pak and carrot halwa is a carrot based sweet dessert pudding from the Indian subcontinent.It is made by placing grated carrots in a pot containing specific amount of milk and sugar and then cooking while stirring regularly. This recipe shares the traditional way of making delicious gajar ka halwa without any shortcuts or tweaks. During winters, we make carrot halwa often. It is a popular sweet made in North India during winters. This traditional way uses just full fat milk,ghee and sugar to make the halwa. When we add milk and cook the carrots completely in milk, the texture and taste we get will be wow!! You don’t need khoya or condensed milk. You can use any carrots- Red,orange or black. But just make sure they are not fibrous and dense.Here i have used orange carrots. Ingredients: Ghee 2tsp cashews 10-15 Raisins 10-15 Grated carrot 3cups Milk 3cups Sugar 1cup Cardamom powder 1/2tsp How to make Carrot Halwa: 1.First rinse and peel 8-9 medium sized carrots and grate them. 2.I prefer heating carrots with a hand held heater. You will need 3 cups of grated carrots. 3.In a heavy kadai, add 2tsps of ghee and fry cashews and raisins till golden brown. keep it aside 4.Add grated carrots to the same kadai and sauté well for 10-15 mins. Sauté until water from carrots is complete absorbed. 5. Now add 3cups of milk to the carrots and stir well. 6.Cover and cook for sometime. Keep stirring at regular intervals. 7. Cook till milk is absorbed completely. Now add sugar 1 cup and stir well 8. Sugar starts to dissolve. Keep stirring till ghee releases at the edges. 9. Now add cardamom powder and fried cashews and raisins. Yummy carrot halwa is ready!!!! serve hot with ice cream You can also refrigerate the halwa and serve it. It tastes awesome either ways!!
